We looked at each other a little too long to be ‘just friends’.

Camilla’s recipes, here we go !
#1 - PASTA WITH HERB PESTO AND RICOTTA
mezzi rigatoni or mezze pipe
fresh ricotta
basil
parsley
wild fennel (the herb)
paprika
peperoncino
pecorino cheese
extra virgin olive oil
To make the pesto : Mix the basil, parsley and wild fennel with some evoo using an immersion blender (you can get a little creative here - add a couple of sundried tomatoes for instance). Add the ricotta, paprika, peperoncino and salt (I like this pasta super salty!) and blend again until you get a beautiful, mouth watering green cream.
Cook the pasta (AL DENTE!), then move it to a bowl, add the pesto and stir well. Add some of the pasta cooking water to get an even richer, smoother cream.
Top with grated pecorino, fresh basil and chili flakes and enjoy this wonderful thing !
